Women who are trying to add more vegetables to their diet tell me they canât bear to eat another iceberg lettuce salad. While itâs very easy to find in stores and restaurants, iceberg lettuce just doesnât cut it when it comes to nutrition or flavor.
Luckily, Iâve just taken a spin through my local farmerâs market where I saw plenty of other delicious options for fresh salad greens. Plus, remember that greens donât have to be the centerpiece of every salad you eat, especially when there are so many other possibilities available ranging from crunchy, to sweet, to colorful.

Orange-Mustard Vinaigrette
Juice of 1 orange
1 Tbsp olive oil
1 tsp prepared mustard, any type
Mix all ingredients in a jar and shake well. Makes one-two servings.
